Ingredients

  • 12 oz penne pasta
  • 1/4 cup reserved pasta water as needed
  • 1 tbs olive oil
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 1 tsp lemon zest
  • 2 tbs fresh lemon juice
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • Chopped fresh parsley or basil for topping

Instructions

  1. Cook the penne in salted water until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1–2 minutes, just until fragrant.
  3. Stir in the cream, lemon zest, lemon juice, salt, and pepper. Simmer for 2–3 minutes.
  4. Add the cooked penne and Parmesan cheese. Toss until the pasta is well coated. Add a splash of pasta water to loosen the sauce if needed.
  5. Taste and adjust seasoning. Serve warm, topped with fresh herbs and extra Parmesan.

Notes

* This dish is best served right away, but leftovers can be stored in the fridge for up to 3 days. Reheat gently on the stove with a splash of water or cream.
* For extra flavor, sauté a pinch of red pepper flakes with the garlic.
